Today we are already on Day 4 of Beet Week!

This recipe is another showstopper. I mean, just look at this utterly attractive, magenta-colored goddess of a beet smoothie! One of the greatest things about beets is the fantastic color. They're so beautiful, and they really make every dish pop out, which is great if you want to impress friends and family. Just watch out you don't stain yourself!

And the visual isn't where the appeal stops. This smoothiepacks a powerful antioxidant punch.

This Smoothie Packs a Healthy and Delicious Punch

There are 3 super foods in this beet smoothiethat are providing great nutritional value: berries (especially blueberries), beets and chia seeds.

For natural sweetness, we have a very ripe, frozen banana and medjool dates. Unsweetened almond milk as the liquid ingredient makes this smoothie veganand paleo-friendly as well.

Make Your Own Beet Puree and Add It To The Smoothie

The beet is in form of beet puree. If you are making the Double Chocolate Beet Muffins (yesterday's recipe), chances are you have some leftover beet puree.

Essentially, you need to boil or roast a beet until very soft (about 1 hour), peel it and puree it. A food processor comes in very handy here.

In the recipe box below, I wrote 1-2 tablespoons as amount for the beet puree. At 1 tablespoon I didn't taste the beet flavor at all. At 2 tablespoons the smoothie has a slight, but not too overwhelming earthy note. If you are daring, you could even add 3.

Antioxidant Power Smoothie

This bright Antioxidant Power Smoothie is a weapon of health. Mixed berries, beet puree and chia seeds provide the nutritional value. A frozen banana and medjool dates give this smoothie natural sweetness.

Servings 1 large or 2 small (1 cup) servings

Ingredients

  • 1 cup mixed berries frozen; I used blueberries, raspberries + strawberries
  • 1 banana frozen
  • 2-3 medjool dates
  • 1-2 tablespoons beets cooked & puréed
  • 1 cup almond milk
  • 1 tablespoon chia seeds

Instructions

  • Process all ingredients in a blender until completely smooth. This makes a very thick smoothie.

  • If you prefer a little texture, stir the chia seeds in by hand. Otherwise blend them as well.

  • Sprinkle a few more chia seeds on top and serve right away.

  • If you let the smoothie sit for a while, it might thicken up too much from the swelling chia seeds. In that case just stir in a little more liquid.

    This was sooo delicious! I love beets! I altered your recipe a bit due to what I had on hand; I used frozen cooked beets, instead of the purée, and I didn’t have dates so I used 2 Tbsp of agave syrup, and lastly, I’m allergic to nuts so I used plain oat milk. Wow, was it good! Thanks!

    Beet Puree = Is that homemade or can it be purchased in a can or frozen?

      I had some cooked/roasted beets that I pureed. I've seen canned or vacuum-sealed cooked beets in stores, if you don't want to make it yourself.
