This quick and easy Thai Chicken Bake dinner recipe will break up the normal, fill your plate with amazing flavors, and takes only a few ingredients and a few minutes to make!

A few weeks ago I posted this Easy Fajita Chicken Bake recipe and in just a few days it was pinned over 40 THOUSAND times and I had friends calling and texting telling me how much they liked it and wanting more easy and tastydinner recipes like it. I actually have quite a few really delicious recipes that are my go to easy meals for hectic days. When I saw this super easy Success® boil-in-bag Jasmine rice, I partnered with Success®Rice to share another one of my favorite recipes, a great Asian inspired dinner with you that is now quicker and easier than ever!

What I love about making this dish is that it really breaks up the monotony of week night dinnersbecause the bold, rich, Asian flavors are not your averageevery day meal. I tend to be more intimidated by making Asian dishes because it is not something I grew up eating but this recipe is so quick, easy and fool proof there is nothing even slightly scary about it!

This dinnercomes together so quickly with just 5 main ingredients! First, trim your chicken breasts and cut them into cubes. Next chop the red pepper into strips and then cut the strips in half or thirds.

Next mix up the teriyaki sauce, the rice wine vinegar and the red pepper flakes. Mix the chicken, peppers, and sauce until everything is combined and the chicken and peppers are coated with sauce.

Pour the mixture into a glass baking dish and bake at 400˚F for 10 minutes. Stir the mixture and return to the oven to bake 10-15 more minutes or until the chicken is cooked though.

While the chicken is cooking prepare yourSuccess® Jasmine Rice. It is almost crazy how easy it is to make this rice. As much time as I spend in the kitchen I have always been surprisingly bad at cooking rice. I foundSuccess® boil-in-bag rice shortly after I got married and was totally sold! It has no guess work and cooks in only 10 minutes! No more measuring water, no more crunchy, or slimy rice. There is plenty of room for error and the stuff always turns out amazing! When I first started using theSuccess® boil-in-bag rice they only had white and brown and I used them both. Fast forward to now and they have 4 amazing flavors includingBasmati Rice and Jasmine Rice which is perfect for most Asian dishes and exactly what I love to use for this Easy Thai Chicken Bake.

To make the rice, add water to a sauce pan, submerge the bag of rice and boil uncovered for 8-12 minutes. Then just pop the bag out of the water to drain and voila! It is done! Seriously. That is it! It is buttery, nutty, and silky smooth. I don’t know how they do it but it comes out perfect every time!

Once your chicken is out of the oven and the rice is cooked to perfection, pile a nice helping ofSuccess® Jasmine Rice on your plate. Top it with the Thai Chicken Bake and garnish with scallions and peanuts. Perfect bold flavors ready in just a few minutes! That is my kind of dinner!

Ingredients

  • 2 lbs Boneless skinless chicken breast
  • 2 large red bell peppers
  • 1/2 cup teriyaki sauce
  • 2 tbsp rice wine vinegar
  • 1 tsp red pepper flakes optional
  • 1 bag Success® Jasmine Rice
  • Garnish with Scallions and crushed peanuts

Instructions

  • Trim the chicken breast and cut into cubes (approx 1-2" in.)

  • Wash and deseed the red peppers and then cut into slices. Cut the slices into halves or thirds.

  • Make the sauce by combining the teriyaki sauce, rice wine vinegar, and red pepper flakes.

  • Mix the chicken, peppers and sauce together until everything is evenly coated and then pour into a glass baking dish.

  • Bake at 400?F for 10 minutes, stir and bake for 10-15 more minutes or until the chicken is cooked through.

  • While the chicken bakes, cook the Success® Jasmine Rice as directed on the package.

  • Serve by placing cooked chicken and sauce on a bed of Success® Jasmine Rice and garnishing with scallions and peanuts.

  • Enjoy!

    Thanks for the great recipe! I made it tonight and the fam loved it. I cooked the chicken for about 10 min. then turned on the broiler for 5 more to give it a nice brown on the top. The veggies were crunchy and delicious as well, I may never stir fry again!

    hello 🙂 is there a substitute to rice vinegar? i live in Egypt and i don’t know if i can fin that here actually ill have to check first but can i use something else bearing in mind that I’m new to cooking please 😀 and BTW I’m in love with your recipes and i cant wait to try them out

      Hi Basma! Rice vinegar is a product of alcohol. Hence, you may not find it easily in Egypt. Vinegar is the best substitute.
