These Spanish Cod Fritters, known as Tortillitas de Bacalao Andaluzas, are packed with flavors, seriously easy to make and done in about 30 minutes. Serve them as a tapas appetizer like they do in Spain, or even as a main course, next to some roasted potatoes.

To make these fritters, I used a cod fillet I bought frozen and thawed out. But you can also use fresh cod if you like, as well as any other type of firm white fish. Such as: Halibut, Tilapia or White Sea Bass.

For the batter I used beer. If beer is not your thing, you can also use club soda. Either way, you want to end up with a semi thick batter once all the ingredients have been added. If your batter is too thick, just add in more beer or club soda.

TIPS & TRICKS to Make this Recipe: To keep the fritters warm, just add them into a preheated oven at its lowest setting. You can make the batter ahead of time. Just cover and add into the fridge. It will hold for up to 3 days.

Classic Spanish Cod Fritters | Tortillitas de Bacalao Andaluzas

Ingredients

FOR THE FRITTERS

  • 1cod fillet8 oz / 250 grams
  • 1/2cupall purpose flour60 grams
  • 1egg
  • 1/3cupbeer90 ml
  • 1smallonion finely chopped
  • 2clovesgarlic roughly chopped
  • 2tbspchopped parsley8 grams
  • 1/2tspsweet smoked Spanish paprika1.25 grams
  • pinchsea salt
  • dashblack pepper

FOR THE AIOLI

  • 2clovesgarlic roughly chopped
  • 1/4tspsaffron threads
  • 1/2cupmayonnaise120 grams
  • 1tsplemon juice5 ml
  • 1tbspextra virgin olive oil15 ml
  • pinchsea salt
  • dashblack pepper

EXTRAS

  • 1/2 cupextra virgin olive oil120 ml

Instructions

  1. Fill a sauce pan half way with water, season with sea salt and heat with a high heat, once it comes to a boil add in the cod fillet, lower to a low-medium heat and simmer for 6 to 7 minutes or until the cod is done and fork tender, then drain into a sieve

  2. Meanwhile, add the flour into a large bowl, make a well in the middle, crack in the egg and whisk the egg, then add in the beer and mix everything together until there are no lumps, add more beer if needed, then add in the onion, garlic, parsley, paprika and season with sea salt & black pepper, mix together until you end up with a semi thick batter

  3. Once the cod is cool enough to handle, finely chop it and add into the bowl with the batter, give it one final mix

  4. Heat a large fry pan with a medium heat and add in the olive oil

  5. Once the oil is hot but not smoking, start adding spoonfuls of the battter into the pan, all evenly spaced out and in a single layer, cook in batches, fry the fritters for about 2 minutes per side or until golden fried all around, then transfer over paper towels

  6. To make the aioli, add in the garlic into a mortar, along with the saffron and a pinch of sea salt, using a pestle pound down until you make a paste-like texture, then add in the mayonnaise, lemon juice, olive oil and season with sea salt & black pepper, mix together until creamy

  7. Transfer the fritters into a serving dish next to the aioli, serve at once, enjoy!
